Directions

Heat pan over medium flame.

Finely dice peppers and onion.

Add onion and pepper and sauté for 5 minutes.

Meanwhile finely dice chicken breast and add to pan.

Add water, simmer for 3 minutes then add chipotle peppers and basmati rice.

Cover tightly and cook over low heat until rice is cooked.
