40 minRed cabbage with diced apples is the lighter, diabetic-friendly cousin of German rotkohl. The classic version would use red wine, bacon fat, and plenty of brown sugar; this one trades all of that for lemon juice, a chicken bouillon cube, and a touch of artificial sweetener. What it loses in richness it makes up for in brightness and speed.
The method could not be simpler. Thinly sliced cabbage (use real red cabbage for the signature ruby color), diced green apple, diced onion, lemon juice, a crushed chicken bouillon cube, a pinch of allspice, and a dash of black pepper all go into a saucepan together. Add water, cover, and simmer 20 minutes until the cabbage turns tender but still holds a little bite. Stir in the artificial sweetener at the end (heat can make some sweeteners bitter if added early).
The lemon juice pulls double duty: it provides the acid that keeps the cabbage a vivid red instead of the muddy purple boiled cabbage turns without it, and it counters the sweetness of the apple. Allspice adds the warm background note that makes the side taste properly German.
Kitchen Tips
- Use a tart green apple like Granny Smith. Sweet apples like Fuji dissolve into mush and skew the sweetness balance.
- Keep the lemon juice in the pot from the start. Acid is what preserves the red color of the cabbage; without it, the dish goes a dull purple-blue.
- Stir artificial sweetener in off the heat. Some sweeteners (particularly aspartame-based) turn bitter with prolonged cooking.
- Slice the cabbage thin. Thick shreds take twice as long to tenderize and make uneven bites.
Variations
- Classic sugar version: Skip the artificial sweetener and use 2 tablespoons of brown sugar for a more traditional sweet-sour balance.
- Add vinegar depth: Splash in a tablespoon of apple cider vinegar with the lemon juice for more pronounced tang.
- With cloves: Add a pinch of ground cloves alongside the allspice for deeper holiday-season flavor.
