The pineapple syrup is what makes this work. It thins the mash to a silky consistency while adding a bright, fruity sweetness that complements the earthy sweetness of the potatoes. Don’t drain it. Every drop goes in.

Boil the sweet potatoes whole with the skins on, then peel after cooking. This keeps them from absorbing too much water during boiling, which would make the mash watery and bland. Peel while still warm. The skins slip right off.

Directions
