Ingredients

3ounces mussels cooked and shelled
1ounce celery
1ounce carrot
1ounce bread crumbs
4each egg yolks
2ounces herring roe
1pinch mixed herbs
1pinch dill weed
1pinch garlic crushed
1x brandy to taste
1x double cream to taste
1x seasoning mix to taste

Directions

Finely mince mussels, vegetables and herring roe.

Add herbs, seasoning and breadcrumbs.

Blend well with egg yolks, brandy and cream.

Cook for 1/2 hour at 350 F in a Sainmarie in the oven.

Cook and serve with toast fingers.
