The dairy proteins create a tender texture that survives slicing and toasting better than a plain water-and-flour loaf.
Dill seed is doing more work than dill weed would here, the whole seeds release their aromatic oils gradually during the long bake, giving each slice that signature dill-pickle aroma without dominating the flavor.
Warm the dairy and water mixture slightly before adding to the bread machine pan, cold liquids slow the yeast and disrupt the rise cycle. Lukewarm is the target, not hot, hot will kill the yeast.
