| 2 1/4 | cups | flour, unbleached all-purpose | |
| 1/2 | cup | walnuts | chopped |
| 2 | large | eggs | |
| 1/4 | teaspoon | nutmeg | |
| 2 | teaspoons | baking powder | |
| 1/2 | cup | raisins, seedless | |
| 1/2 | cup | yam | canned, chopped |
| 2/3 | cup | maple syrup | pure |
| 2 | tablespoons | cream | |
| 2 | teaspoons | baking soda | |
| 2 | tablespoons | orange marmalade | or 2 cups tart green apples |
| 2 | tablespoons | liqueur | grand marnier or cointreau, orange flavor |
| 1/4 | teaspoon | allspice | |
| 1/2 | cup | butter | softened |
Preheat oven to 350 F.
Sift together flour, baking powder, baking soda, allspice and nutmeg. Set aside.
In separate bowl, combine maple syrup, butter and eggs, and beat with electric mixer for 3 minutes.
By hand, stir in yams, apples, walnuts, raisins, cream and marmalade.
Add flour mixture a little at a time, stirring well after each addition; batter will be stiff.
Pour into lightly oiled 9 x 5 inch loaf pans.
Bake at 350 F for 60-70 minutes.
Let cake cool 10 minutes, then turn onto cooling rack.
Let cool completely before slicing.

We did 1 thing different,used boneless,skinless chicken breasts.just needed to cook 50 minutes.. Added graded orange peel,to the egg mixture,par excellance:::::: needless to say there was nothing left......
