60 minY’all, these hush puppies are the real deal. Straight-up North Carolina style, which means the cornmeal is the star and the flour barely makes a cameo. Just a tablespoon of flour to help bind, and the rest is all corn flavor with buttermilk tang and a hint of sweetness.
The batter is dead simple: mix the dry ingredients, stir in a beaten egg, buttermilk, and water, then drop spoonfuls straight into hot deep fat. No shaping, no fuss. The batter puffs up as it fries and the hush puppies float to the surface when they’re done. That’s your built-in timer right there.
Buttermilk is what gives these their tender interior. The acid reacts with the baking soda to create lift, and the cultured tang balances the sweetness of the corn. If you don’t have buttermilk on hand, the recipe notes you can mix milk with a tablespoon of lemon juice and let it sit for 5 minutes.
