| 1 | package | tofu | Lite, firm, (10.5 oz), drained |
| 1 | teaspoon | cider vinegar | |
| 1 | teaspoon | honey | or other natural sweetener |
| 2 | teaspoons | prepared mustard | |
| 1/2 | teaspoon | turmeric | |
| 2 | tablespoons | celery | diced |
| 1 | teaspoon | parsley leaves | chopped |
| 1 | x | paprika | |
| 1x | black pepper | ||
| 2 | tablespoons | onion | diced |
Crumble tofu into a small bowl.
In a separate bowl, combine vinegar, mustard, honey and turmeric.
Mix thoroughly and pour over crumbled tofu.
Add celery, onion, parsley, paprika and pepper. Mix thoroughly.
Refrigerate approximately 30 minutesto allow flavors to meld.
Makes three 1/2 cup servings.

If you were a leprechaun what would use for an umbrella? I'll bet you never pondered that one huh? Well, according to the medieval...
I didn't use the pastry in this recipe, but the fillings were all quite delicious. I just threw them in a skillet , as easy as that.
