Mocha Walnut Christmas Cookies

Ingredients

2 cups chocolate chips (semi-sweet) semisweet chocolate chips, divided
2 tablespoons instant coffee
2 teaspoons water boiling
1 cup flour, all-purpose
3/4 teaspoons baking soda
1/2 teaspoon salt
1/2 cup butter softened
1/2 cup sugar
1/2 cup brown sugar firmly packed
1 each egg
1/2 cup walnuts chopped

Directions

Preheat oven to 350F. Melt 1/2 cup chocolate chips over hot water or in microwave. Stir until smooth; cool to room temperature. In small cup, dissolve coffee in boiling water; set aide. Combine flour, soda, and salt; set aside.

In large bowl, combine butter, sugars and coffee; beat until creamy. Add egg and melted chocolate; mix well. Gradually add flour mixture. Stir in remaining 1-1/2 cups chocolate chips and walnuts.

Drop by rounded tablespoonfuls onto ungreased cookie sheets. Bake at 350F for 10-12 minutes. Let stand 2-3 minutes before removing from cookie sheets; cool completely.

Bread Pudding made with French Bread

I had never made bread pudding before and I found this recipe to be easy to do. Also this was the first time I ever ate bread pudding and it was delicious. I plan to make this a regular dessert, its fast, easy and very good.
