Ingredients

Crust
3/4 cup graham wafer crumbs
1/3 cup brown sugar
1 x lemon zest grated
1/4 teaspoon cardamom seeds ground
1/3 cup butter melted
Filling
2 pounds cream cheese
4 large eggs
3/4 cup sugar
1 each lemon juice
1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees F.

Mix crust ingredients together and press into a 10-inch springform pan.

In a large bowl combine the ingredients for the filling. Beat thoroughly and pour over the crust.

Bake 35 minutes. When baking is complete, turn off oven, prop oven door open with folded tea towel and let cake stand in oven for about 1 hour.

Refrigetate several hours before serving.
