Canned chicken, canned mushrooms, canned peas, jarred pimientos, leftover rice, and a single onion. That’s it. The whole thing comes together in 25 minutes and feeds a hungry household.
The pimientos do real work here. Their slightly sweet, smoky pepper flavor lifts the dish from canned-food bland to actually-pretty-good, and their red color makes the bowl look intentional instead of desperate.
