| 1 | pound | soba noodles | uncooked |
| 3 | tablespoons | soy sauce, sodium reduced | |
| 1 | tablespoon | brown sugar | |
| 2 | teaspoons | red pepper flakes | |
| 1 | cup | onions | finely chopped |
| 1 | tablespoon | garlic | minced |
| 1 | tablespoon | ginger root | peeled, grated |
| 1 | cup | snow pea pods | |
| 6 | each | scallions, spring or green onions | chopped |
| 1 | teaspoon | lime zest | grated |
| 1 | cup | mung bean sprouts | |
| 8 | ounces | tofu | firm, cut into 1/2inch cubes |
| 1 | tablespoon | lime juice | fresh |
| 1/4 | cup | cilantro | fresh, chopped |
Prepare noodles according to package directions, drain and set aside.
In a large, nonstick sauté pan, combine soy sauce, brown sugar and red pepper flakes.
Stir to dissolve sugar.
Add onions, garlic and gingerroot.
Cook for 2 minutes.
Add snow peas, scallions and lime peel.
Toss and cook until peas are tender and bright colored, about 1 to 2 minutes.
Add bean sprouts and tofu.
Continue cooking and toss just until bean sprouts are slightly wilted.
Add noodles and toss to mix.
Add lime juice to taste and garnish with cilantro.
Serve hot.

My family enjoyed this recipe. I cut the onions big enough so that they could pick them out and did not put in the peppers. They liked that. Plus, it has a really nice flavor when it is done and the meat was very tender. It is the best roast recipe that I have found. We will definitely make this again.
