These green beans with bamboo shoots are about as fast and clean as a side dish gets. Frozen green beans and canned bamboo shoots come together in the microwave with a pinch of ginger and a touch of butter, all in under 10 minutes from freezer to plate.

Ground ginger is the surprise ingredient. Just a quarter teaspoon adds enough warmth to lift the dish out of plain steamed-vegetable territory and into something with an Asian-leaning character that pairs well with stir-fries, fried rice, or grilled chicken.

The two-stage microwave cook is intentional. The beans need a covered steam to soften, but the bamboo shoots are already tender and just need warming through. Adding them at the start would leave them mushy and waterlogged.
