Four ingredients. One pan. Cookie tray gold. These caramel bars are the kind of dessert you can throw together in fifteen minutes with stuff already in your pantry, but they get eaten in twenty at any potluck table.

The technique is genius in its simplicity. You combine chocolate cake mix and sweetened condensed milk into a thick, almost-cookie-dough batter. Two-thirds gets pressed into the pan for the base. After a quick 8-minute par-bake, you pour caramel topping over the hot bottom layer, sprinkle on chocolate chips, then crumble the remaining batter over the top for a streusel-style finish.

Using reduced-fat cake mix and fat-free condensed milk keeps these slightly lighter than the original, but you wouldn’t know it eating them. The caramel and chocolate chip layer in the middle delivers all the indulgence the bars need.

The par-bake of the bottom layer is the trick that makes this work. Without it, the caramel would soak straight into the raw batter and you’d end up with a gummy mess. Eight minutes gives the bottom enough structure to hold the caramel layer separate.

The top crumble doesn’t need to be uniform. Random clumps are actually better, creating a textural contrast and visual interest that a smooth top can’t match.

Directions

Preheat oven to 350℉ (180℃).

Prepare a 9 x 13 inch pan with cooking spray; set aside.

In a mixing bowl, combine cake mix and condensed milk.

Batter will be thick.

Press ⅔ of batter into prepared pan.

Bake for 8 minutes.

Remove from oven and pour caramel topping over cake.

Sprinkle with chocolate chips.

Crumble remaining batter over top.

Bake for 17 minutes more or until top is dry to the touch.

Cool.
