| 1 | pound | pork | lean, boneless |
| 2 | cloves | garlic | minced |
| 1 | teaspoon | oregano | crumbled |
| 1/2 | teaspoon | cumin | |
| 1 | teaspoon | seasoned salt | |
| 2 | tablespoons | orange juice | |
| 2 | tablespoons | vinegar | |
| 1 | dash | red hot pepper sauce (eg. Tabasco) | |
| 1 | tablespoon | vegetable oil | |
| 1 | medium | onion | and |
| 1 | each | green bell pepper | seeded and sliced |
| 4 | each | flour tortillas | |
| 1 | x | scallions, spring or green onions | tops, sliced |
| 1 | x | lettuce | shredded |
| 1 | x | salsa |
Slice pork across grain into 1/8 inch strips.
Marinate pork strips in garlic, oregano, cumin, salt, orange juice, vinegar and hot pepper sauce for 10 minutes.
Heat heavy skillet or griddle until hot.
Add the tablespoon of oil, onion, green pepper and pork strips; stir fry until pork is no longer pink, about 3 - 5 minutes.
Serve with flour tortillas and accompany with sliced green onion, shredded letuce and salsa.

this recipe is definately a southern delight. However I like to use fresh banana's and not mush them.
