Ingredients

1 pound smoked link sausage cut into 1/2 inch slices
1 medium onion chopped
1 each green bell pepper chopped
1 clove garlic miced
30 ounces kidney beans canned, drained
16 oz tomatoes, canned chopped, with juice
1/2 teaspoon oregano leaves dried
1/2 teaspoon black pepper
1 x rice cooked, hot

Directions

Cook sausage over low heat 5-8 mins.

Add onion, green pepper, and garlic; sauté until tender.

Drain if necessary.

Add beans, tomatoes, and seasonings; simmer, uncovered, 20 mins.

Serve over rice.
