An oven-baked Dutch baby pancake that puffs into a billowy, custardy giant in a 425°F (220°C) oven. The trick is heating the skillet with butter inside the oven before the batter ever touches it. Cold batter pours onto sizzling butter, the egg-rich mix flash-bakes from the outside in, and what emerges 15 minutes later looks like architecture instead of breakfast.

A quick finish of powdered sugar and lemon juice right before pulling it from the oven gives the dessert version a tangy-sweet glaze. The German tradition is just sugar and lemon. The American version (often called a Dutch baby or German pancake) gets piled with fruit, ice cream, jam, syrup, or all of the above.

The nutmeg is the small detail that does big work. An eighth of a teaspoon is enough to round the egg flavor with warm aromatic depth.

Pro Tips

  • Use a heavy 12-inch cast iron skillet if you have one. The thermal mass produces taller puffs and crispier edges than nonstick.
  • Bring eggs and milk to room temperature before whisking. Cold dairy gives a flatter, less dramatic puff.
  • Whisk just until smooth. Overbeating develops gluten and makes the pancake chewy instead of custardy.
  • Don’t open the oven before 12 minutes. Even a brief peek can collapse the puff.

Variations

  • Fill with sliced strawberries, blueberries, or sauteed apples for a fruit dessert version.
  • Add a tablespoon of Grand Marnier or vanilla to the batter for a more dessert-leaning flavor.
  • Skip the sugar and lemon, and serve savory-style with herbs, cheese, and prosciutto.
