| 2 | medium | tomatoes | seeded and cut into small pieces |
| 1 | cup | cucumber | chopped |
| 2 | cups | chickpeas (garbanzo beans) | cooked |
| 1 | cup | parsley leaves | chopped |
| For the dressing | |||
| 3/4 | cup | olive oil | |
| 1/2 | cup | lemon juice | fresh |
| 2 | cloves | garlic | minced |
| 1 | teaspoon | dijon mustard | |
| 1 | teaspoon | coriander | ground |
| 1 | teaspoon | salt | |
| 1 | x | black pepper | fresh, ground |
Mix all ingredients together and toss well with the salad dressing.
Garnish with fresh parsley.

This is one of our favorites. I add more lemon. It's sooo good! I looked online to find it because I misplaced my "Award winning recipes" cookbook in the move. I use vinegar instead of wine (about half the amount) because we don't stock wine.
