Cocoa Bourbon Balls

No-bake cocoa bourbon balls made with crushed vanilla wafers, pecans, powdered sugar, and a generous pour of bourbon. Roll in fruit sugar, chopped pecans, or cocoa powder. Ready in 15 minutes.

15 minThese no-bake bourbon balls are a holiday staple that takes all of 15 minutes and zero oven time. Crushed vanilla wafers, powdered sugar, cocoa, and finely chopped pecans get bound together with corn syrup and a healthy pour of bourbon.
Roll them in fruit sugar for sparkle, chopped pecans for crunch, or cocoa powder for a darker finish. Or do all three and let people pick their favorite.
The longer they sit in an airtight container, the more the bourbon mellows and the flavors come together. They actually get better with time.
Variations
- Swap the bourbon for dark rum for a Caribbean twist
- Use Southern Comfort for a sweeter, fruitier take that’s a crowd favorite
- Add a pinch of espresso powder to the dry mix to deepen the cocoa flavor
Ingredients
Directions
Combine dry ingredients and mix well.
Add corn syrup and bourbon and mix well.
If too moist add a few cookie crumbs, if too dry add a little more bourbon.
Shape into small balls and roll in fruit sugar or finely chopped pecans.
I also roll some in cocoa powder.
Store in an airtight container.
NOTES : Also good made with dark rum.
One year I made with Southern Comfort and everyone liked them.
