These baked chicken drumsticks keep things stripped down to the essentials: lime juice, chili powder, and salt. That’s it. No marinade to prep hours ahead, no complicated spice rub, just a squeeze of lime and a dusting of chili powder before they go in the oven.

Removing the skin before baking is key to how these work. Without skin, the chili powder and lime sit directly on the meat, creating a thin, spiced crust that browns and crisps as the drumsticks bake. With skin on, all that seasoning stays on the outside while the meat underneath stays bland.

Turning the drumsticks every 15 minutes ensures they brown evenly on all sides instead of scorching on the bottom. Three turns over the full baking time gives you color all around.

Let them cool to room temperature before serving. These are meant to be eaten at room temp or even cold, making them ideal for packed lunches, picnics, or meal prep.

  • Use fresh lime juice, not bottled. Fresh lime has a brighter, more complex acidity that bottled lime can’t replicate.

Directions

Preheat oven to 375℉ (190℃).

Moisten drumsticks with lime juice, season with chili powder and sprinkle with salt if you wish.

Coat a shallow baking pan with cooking spray.

Place drumsticks in pan and bake for 30 to 45 minutes, turning drumsticks every 15 minutes, until brown, tender and cooked through.

Remove from oven and let cool to room temperature before serving.
