Ingredients

1/2 pound bacon iced
2 CLOVE garlic minced
2 each onions diced
1 each green bell pepper diced
1 each sweet red bell pepper diced
1 x red pepper flakes crushed
8 ounces okra sliced
6 ounces tomato paste
2 pounds catfish ubed
1 x salt
1 x black pepper
2 1/2 cups tomatoes, canned diced
3 cups fish stock

Directions

In a heavy bottomed soup pot, sauté the bacon.

As soon as it startes to brown add the onion and diced green and red pepper.

Cook for about 5 min more.

Add the diced tomatoes. Cook 5 min. more. Add the okra and the fish stock bring to a boil and reduce to a simmer.

Cook till soup starts to thicken(tomato paste can be added at this point if desired).

Add the cubed catfish and simmer till fish is done.

Season w/salt and pepper. Pass the crushed red pepper flakes.

Pete & Shannon's Damn Good Chili

I have made this several times as written--always excellent. I now make a few modifications; 3 cloves garlic instead of powder, spicy Italian sausage instead of breakfast sausage, 2 cans chili beans and either omit jalapeno pepper or only use one.
