Cantaloupe with Chicken Salad

Ingredients

Chicken
2cups chicken cooked, cubed
2cups blueberries fresh
1cup celery sliced
1cup green grapes seedless , halved
1/2cup almonds sliced
3each cantaloupe halved seeded
Dressing
1/2cup mayonnaise
1/4cup sour cream
1tablespoon lemon juice fresh
1 1/2teaspoons lemon zest grated
1 1/2teaspoons sugar
1/2teaspoon ginger ground
1/4teaspoon salt

Directions

In a large bowl, combine chicken, blueberries, celery, grapes and almonds.

In a small bowl, mix dressing ingredients.

Pour over the chicken mixture and toss gently.

Spoon into cantaloupe halves.

Serves 6.
