Cafe Royale is old-school European elegance. Strong, hot coffee gets topped with floating brandy, then a sugar cube soaked in more brandy is warmed in a spoon, lit on fire, and slowly lowered into the cup to ignite the surface.
The blue flame dances across the top for a moment before sinking in, leaving behind a coffee that’s subtly sweet with a warm brandy glow.
This is the kind of drink you serve after a dinner party when you want people to remember the evening.
Kitchen Tips
- Warm your mug first. Cold ceramic cools the coffee too fast, and you need that heat to help the brandy ignite.
- Use a metal spoon, never plastic, for the flambee step.
- Wait a full minute after the flame dies before sipping. The rim of the mug will be hot.
Ingredients
Directions
Pour coffee into warmed mug.
Float 2 teaspoons brandy on coffee.
Put remaining 2 teaspoons brandy into a tablespoon with sugar cube.
Warm spoon over hot coffee.
With a match, carefully ignite brandy in teaspoon.
Slowly lower spoon into coffee to ignite floating brandy.
Wait 1 minute after flame has died before drinking.
