Bruschetta with Roasted Peppers & Mozzarella

This is a very nice roasted peppers recipe. Good side dish, can be served with any meat dish.

Ingredients

4 each green bell peppers roasted, or yellow, or mixed bell peppers, peeled, seeded and sliced (2 cups)
2 tablespoons basil finely chopped fresh
1 tablespoon balsamic vinegar
1 x salt to taste
1 x black pepper ground to taste
8 slices whole wheat bread 1/2-inch-thick
1 clove garlic peeled and cut in half
2 ounces mozzarella cheese, non-fat fresh, cut into thin strips
2 teaspoons olive oil, extra-virgin

Directions

Preheat broiler.

Combine roasted peppers, basil and vinegar in a medium bowl.

Season with salt and pepper.

Toast or grill bread slices lightly.

Rub both sides of the bread with the cut sides of the garlic.

Place bread on a baking sheet; top with rthe oasted peppers.

Lay mozzarella strips on a diagonal over the roasted peppers and drizzle with oil.

Broil bruschetta 6 inches from the heat source until the cheese melts and starts to brown.

Serve hot.

$25,000 Chili

I tweeked this recipe a bit. If you use chorizo instead of the pork, cook the meat in olive oil, drain the meat, add some sliced serrano peppers, use habenero sauce for the hot sauce, and use a can of tomatoes with habeneros, and leave out the beer. It is very good.
