25 minThese bran muffins are a no-fuss breakfast that leans on a bran muffin mix for speed. The melted butter adds richness that boxed mixes sometimes lack, and the technique is dead simple: wet into dry, stir until just combined, bake.
The “don’t over-mix” instruction isn’t just a suggestion. Bran muffin batter toughens fast. Stir until you don’t see dry streaks and stop. A few lumps are your friend. They disappear in the oven and you get a tender crumb instead of a rubbery one.
The raisins are optional, but they add pockets of sweetness and chew that break up the earthy bran flavor nicely. Fold them in at the very end so they distribute evenly without extra stirring.
Kitchen Tips
- Preheat the oven fully before the batter goes in. A hot oven gives these a good initial rise and a domed top.
- Check doneness by pressing the top gently. When they spring back and pull slightly from the sides of the cup, they’re done.
- Store leftovers in a sealed bag in the fridge. Reheat in a low oven for a few minutes rather than the microwave for better texture.
- For extra moisture, plump the raisins in hot water for 10 minutes before folding them in, then drain well.

In large mixing bowl, beat eggs and milk, then whisk in melted butter.
Stir in mix just until it is moistened; don’t over-mix.
Stir in raisins if desired.
Divide among muffin cups and bake in preheated 425℉ (220℃) oven for 20 minutes, or until muffins are firm and shrink back from sides of cups slightly.
Serve immediately.
Leftovers may be stored in plastic bags in fridge for later rewarming in moderate oven or mircowave.
