Ingredients

15 ounces black beans, canned rinsed, or you can use dried beans
4 tablespoons salsa
1 tablespoon jalapeno pepper chopped, or more to taste
1/2 teaspoon cumin ground, or more to taste
1 each avocado ripe, pitted
2 tablespoons onion finely chopped
1 tablespoon lime juice
1 each bread, french baguette whole grain, about 20 inches long
1 1/2 cups green cabbage shredded

Directions

Mash beans with a folk in a medium bowl, then mix in salsa, jalapeƱo and cumin.

Mash avocado with a folk in a small bowl, then mix in onion and lime juice.

Cut baguette into 4 equal lengths.

Split each piece in half horizontally.

Pull out most of the soft bread from the center then left with mostly crust.

Divide the bean paste, avocado mixture and cabbage evenly among the sandwiches.

Cut each one in half and serve.

Fairly good, yesterday I made this recipe, and my husband made the whole grain baguette by himself, we used homemade salsa, and I also added about 1/4 cup cilantro, so our sandwich really turned out very delicious, nice recipe.

Leek Potato Soup

Soup remained lumpy after pureeing. I think it would be better to cook the leeks/onions with the potatoes in addition to the sauteeing. I added fresh dillbecause I thought it needed jazzing up. Would probably preferred straight chicken stock rather than 50-50 mixture with water.
