Belgian Chocolate Snack Cake

Ingredients

2 1/3 cups sugar
1 2/3 cups cocoa powder
2 1/4 cups water
2/3 cup vegetable oil
3 large eggs
2 tablespoons sour cream
2 teaspoons vanilla extract
2 1/3 cups flour, all-purpose
3 tablespoons cornstarch
2 1/2 teaspoons baking soda
1/2 teaspoon salt
Glaze
1/2 cup heavy whipping cream
8 ounces chocolate (semi-sweet) chopped

Directions

Preheat oven to 325 degrees F.

Grease 2 9 inch round cake pans. Sift sugar and cocoa together in large bowl.

Whisk in water, then oil, eggs, sour cream and vainlla.

Whisk in dry ingredients until smooth.

Pour into pans and bake 40-45 min. until firm in center. Cool in pans on racks 10 min.

Invert and remove pans; cool completely.

GLAZE: Heat cream to boiling.

Remove from heat and add chocolate and stir until smooth.

Pour evenly over cakes.
