If you’ve ever wanted a barbecue sauce that tastes like you raided a spice market, this is the one.

Crushed tomatoes and tomato paste give it a rich, thick base, while honey balances the heat from chili powder, red pepper flakes, and a generous pour of Tabasco.

Cumin, coriander, oregano, thyme, and bay leaves add layers of warmth that keep building as the sauce simmers on the stove.

Red wine vinegar and lemon juice cut through the sweetness with a sharp, bright edge.

Let it cool and use it as a basting sauce for anything you’re throwing on the grill. Five cups means you’ll have plenty to stash in the fridge.

Chef Tips

  • Stir frequently during the 30-minute simmer; the tomato paste likes to stick and scorch on the bottom
  • Remove the bay leaves before storing or serving
  • Fresh oregano and thyme make a noticeable difference here, but dried works if that’s what you have

Directions

Heat the oil in a saucepan and add the onions. Cook, stirring until wilted. Add the garlic, cook briefly and add the remaining ingredients. Bring to a simmer and cook, stirring often, about 30 minutes. Let the sauce cool and use for basting.

Refrigerates well. Makes 5 cups.
