Ingredients

1 pound pasta, angel hair or capellini
2 tablespoons vegetable oil
1 tablespoon garlic minced
5 cups tomatoes diced
1/2 teaspoon basil
3/4 cup chicken broth low-sodium
5 tablespoons parmesan, parmigiano-reggiano cheese, grated
1 x salt to taste
1 x black pepper to taste

Directions

Prepare pasta according to package directions; drain.

Heat oil in a large skillet over medium-high heat.

Add garlic and cook for one minute.

Add tomatoes, basil, salt and pepper.

Cook for 3 minutes. Add hot pasta to skillet; toss well.

Add chicken broth and stir.

Toss with Parmesan cheese and serve immediately.

Each serving provides: 369 Calories; 12.8 g Protein; 63.5 g Carbohydrates; 7 g Fat; 3. 7 mg Cholesterol; 162 mg Sodium.

Not a favorite recipe. It has very little sauce. We love tomatoes so i added more than it said but it wasn't that great. I wouldn't make it again unless i made some alterations to the recipe.

Pumpkin & Cream Cheese Rollups

I made this for my family and it immediately disappeared. Absolutely yummy it would be a great item to take to a bazaar or bring a dish dinner. You'll really stand out with this one. On the downside, I sprinkled confectioner's suger on the top and it "melted into" the cake when left overnight, so put the sugar on at the very last moment if you want it to look fresh. It didn't change the way the cake tasted, though.
