After the Holidays Salad

Great for using up turkey left overs after a Holiday feast. The fruit, nuts and seasonings give the salad a unique flavor.

Ingredients

2cups turkey cooked
1cup pineapple, canned chunks well drained
1cup celery diced
1/2cup scallions, spring or green onions sliced
1/4cup peanuts dry roasted
1cup green bell peppers diced
2/3cup mayonnaise
2tablespoons chutney chopped
1tablespoon lime juice
1/2teaspoon curry powder
1/4teaspoon salt
1x lettuce leaves, optional

Directions

In a mixing bowl, toss first six ingredients.

In a small bowl, combine all remaining ingredients except lettuce. Pour over turkey and mix gently.

Chill. Serve on a bed of lettuce, if desired.

Yields: 4 servings.

Cinnamon Rolls

This recipe is easy and great tasting. I make up a batch in my bread maker, then prepare the rolls on a cookie sheet(except icing), and stick the pan in the freezer, then bag up in a freezer baggie. I take them out the night before, place on a cookie sheet and let thaw over night, ready to bake in the morning. I make several batches up for last minute breakfasts.
