I am wondering if I could add the honey to the milk before or during the boiling of the milk or, will the honey be consumed by the enzymes in the active culture that is added.

You can add honey to the milk before or during boiling, but keep in mind that high heat can break down some of its beneficial compounds and alter its flavor. If you're making yogurt or another cultured dairy product, it's best to add honey after the milk has cooled and the culture has been added. This way, the active enzymes in the culture won’t compete with or be affected by the honey.
