Chicken salad with cooked dressing.

In my divorce hubby took all the cookbooks, this is just one of those recipes I can't wing. Please help! Thank you

Old Fashioned Boiled Salad Dressing

About This Recipe

"This is my grandmother's recipe for the salad dressing she used instead of mayonaise. (I never tasted mayo until I was a teenager). We used it in pasta salads, egg and tuna salads and sandwiches. I still don't eat BLTs without the tang of this dressing. Grandma made hers on the stovetop and had to stir constantly to avoid scorching. I now do mine in the microwave and no longer have to worry about that."

Ingredients

1/2 cup sugar

1 tablespoon cornstarch

1/2 teaspoon salt

1 egg

1/4 cup vinegar ( either white or cider )

1/2 cup hot water

2 tablespoons prepared yellow mustard ( Dijon, Honey Mustard or other flavors will work)

1 tablespoon butter

Directions

1. In microwave safe bowl mix sugar, cornstarch and salt.

2. Whisk in the egg, vinegar, water and mustard.

3. Microwave on high for 3 minutes then stir.

4. Microwave again on high for 1 minute then stir and repeat in 1 minute increments until dressing comes to a boil and thickens - about 5 - 6 minutes total cook time. (It will continue to thicken as it cools).

5. Add butter.

6. Store in refrigerator.

Chicken Salad with Cooked Dressing

Ingredients

1 tb Flour

COOKED DRESSING INGREDIENTS

Chopped yellow onion

1/2 c "Chicken Soup Stock" or

1 tb Dry mustard

1/2 c Cider vinegar

CHICKEN SALAD INGREDIENTS

2 Egg yolks

WITH

1/2 Portion good mayonnaise

1/2 c Cream

Cold cooked chicken; diced

1/2 -portion cooked dressing

Salt & white pepper to taste

Celery; chopped

2 tb Sugar

Preparation

I am told that this is the solution to supper on a hot southern summer day.

This is great as a main supper or luncheon dish.

It is terrific in a sandwich and it is perfect for a snack in the middle of the night.

Dont overcook the chicken, please.

COOKED DRESSING: Place all the ingredients in a double boiler and mix with electric mixer

or wire whip. Place double boiler on the heat and cook, stirring constantly,

until the mixture thickens. Cool before using.

CHICKEN SALAD: Mix all ingredients to taste & serve chilled. From .
