Favorite Restaurant Sauce Recipe
Preparation time: 10 minutes. Makes 2 1/2 cups.

Ingredients:
2 ounces dill pickes, finely chopped (or sweet pickles for an entirely different taste)
1 ounces onions, finely chopped
1 ounce finely chopped or minced capers
2 cups mayonnaise
1 tablespoon parsley, finely chopped
Instructions:
Chop the pickles and onions very finely with a knife or food processor
Chop the capers if they are large
Press the liquid out of the pickles and capers in a fine sieve so that they don't make the sauce too watery
Combine all ingredients in a mixing bowl and mix well using a whisk or spoon
Chill before serving
Tartar sauce (with capers and egg)
Ingredients
½ cup of mayonnaise
1 hard-boiled egg
¼ of a small chopped onion
1 chopped dill pickle
1 tbsp of capers
1 tbsp of lemon juice
1 tsp of chives
salt and pepper
Method
Cut the hard-boiled egg, dill pickle and onion into small pieces.
Chop the chives into small pieces.
Place all of the ingredients into a blender or food processor and mix until the ingredients have combined together.
Transfer to an airtight container and refrigerate for at least an hour before using.
Tartare sauce
Ingredients
8 fl oz (225 ml) of mayonnaise
1 tbsp of chopped gherkins
1 tbsp of chopped capers
1 tbsp of lemon juice
1 tbsp of freshly chopped chives
1 tbsp of freshly chopped parsley
salt and pepper
Method
Make sure that all the ingredients that need chopping are finely chopped into small pieces.
Place all of the ingredients together into a mixing bowl and combine thoroughly with a spoon or spatula.
Check the seasoning and adjust if necessary.
Cover the bowl with a layer of cling film and refrigerate for at least 30 minutes before serving with your choice of fish or seafood.
Purely homemade tartar sauce
Ingredients
For the mayonnaise
2 egg yolks
300 ml (½ pint) olive oil
2 tsp of white wine vinegar
1 tsp of Dijon mustard
½ tsp of sugar
salt and pepper
For the tartar sauce
4 tsp of chopped capers
4 tsp of chopped gherkins
4 tsp of freshly chopped parsley
2 tsp of chopped chives
2 tbsp of lemon juice
Method
First of all prepare the homemade mayonnaise. Start off by placing all of the mayonnaise ingredients except for the olive oil into a food processor or blender and combine until the ingredients have blended together to form a smooth and pale-coloured paste.
With the processor running, very slowly to begin with, start adding the olive oil through the feeder tube.
Continue to pour in the olive oil in a steady stream until it has all been used up and the mixture has thickened to the desired consistency.
Add all of the tartar sauce ingredients except for the lemon juice and blend together until combined.
Add the lemon juice at the end, drop by drop, until the desired taste has been reached.
Season with salt and pepper if required.
Transfer the tartar sauce to a jar with a screw-on lid and refrigerate for at least an hour before using.
Keep in the refrigerator for up to three days.
