I wuld like to know how to make pumkin soup from ONLY these ingredients:
Canned pumpkin
Cream
Sugar
Salt
Pepper
Possibly water for consistency
Can anyone help? I've had it before at a deli, it tastes a lot like pumpkin pie. They list the ingredients above the soup, so that's how I know what's in it.
PUMPKIN SOUP
1 lg. onion, minced
3 tbsp. butter
4 c. chicken or turkey stock diluted with 2 c. water
3 c. cooked or canned pumpkin
Salt & pepper
Pinch of nutmeg
Orange juice to taste
Saute the onion in the butter until limp. Add the pumpkin and the stock and bring to a simmer. Cook for about 10 minutes. Put contents of saucepan in blender and puree. It may require doing half at a time. Reheat and season to taste. A splash of cream or half and half will make the soup richer, but not necessary. Will also freeze beautifully.
WILLIAMSBURG PUMPKIN SOUP
1/4 c. finely chopped onion
4 tbsp. butter
1 can cream of chicken soup
1 c. canned pumpkin
1/2 tsp. ground nutmeg
1/2 tsp. salt
Dash of pepper
1 soup can water
In saucepan, cook onions in butter until tender. Stir in soup, pumpkin, and seasonings. Gradually add water. Heat; stir occasionally. Garnish with parsley. Makes 2 1/2 cups.
Pumpkin Soup with Almonds
Serves 4
INGREDIENTS
1 lb 2oz pumpkin, peeled de-seeded and chopped
salt & freshly milled grinder) black pepper
1 cup milk
Ground nutmeg
1 c half and half cream
4 tblsp flaked almond, toasted
METHOD
Place pumpkin in a saucepan with the milk, salt,
pepper and nutmeg. Bring to the boil and simmer
for about 30 minutes until tender.
Pour into a blender and blend until smooth.
Return to the pan and stir in the cream.
Sprinkle a tablsp of toasted almonds onto each
portion before serving.
