CHERRY TORTE

20 graham cracker sq., crushed
fine (1 3/4 c.)
1/2 c. melted butter (not
oleo)
1/2 c. brown sugar
8 oz. pkg. cream cheese,
warmed until soft
1/2 c. sugar
2 eggs
2 Tbsp. lemon juice
31 oz. can cherry pie filling
Mix crackers, butter and brown sugar together and pat
firmly into bottom of 9 x 13-inch dish. Cream the cream cheese
and sugar together with the electric beater. Add eggs one at a
time and beat well. Add lemon juice. Pour this mixture over
the crumbs and bake at 350 degrees for 20 minutes. Cool. Spoon cherry
pie filling over the top of baked mixture. Chill overnight.
Serve plain or with whipped cream on top. Serves 12. May use
blueberry or strawberry pie filling instead of cherry.

CHERRY TORTE

2 c. flour
2 Tbsp. sugar
2 sticks butter
1 (8 oz.) pkg. cream cheese
1 c. powdered sugar
Cool Whip
2 cans cherry pie filling
Mix together the flour, 2 tablespoons sugar and butter;
press into a 9 x 13-inch baking pan. Bake at 350 degrees for 20
minutes. Let cool.
Mix while cooling the cream cheese, powdered sugar and
carton of Cool Whip or other brand whip topping. When crust is
cool; spread this on the crust. Add the cans of cherry pie
filling. This can be topping with crushed nuts or left plain
on top.
For a variety of tortes, you can use instead of the
cherry pie filling the blueberry, apple, strawberry or peach
pie filling.
CHERRY-CHEESE DESSERT SQUARES

1 1/2 c. graham cracker crumbs
1/2 c. granulated sugar
1/2 c. melted butter
2 eggs
1 large pkg. (8 oz.) cream
cheese, softened
1 c. granulated sugar
1 1/2 tsp. vanilla
Cherry Topping:
1 can (1 lb. 5 oz.) cherry pie
filling
1 Tbsp. lemon juice
1/2 tsp. almond extract
1/4 tsp. ground cinnamon
Mix thoroughly cracker crumbs, 1/2 cup sugar and butter.
Press evenly over bottom of a 9 x 13-inch baking pan. In a
mixing bowl, beat cream cheese. Then beat in eggs, 1 cup sugar
and vanilla. Spread evenly over crumbs. Bake in a moderate
oven at 375 degrees for 20 minutes. Cool. Spread Cherry Topping
evenly over top. Chill well. Cut into squares. Makes 12 to
15 servings.
Cherry Topping: Combine cherry pie filling with remain-
ing ingredients.
