I am looking for old southern recipes for salads and side dishes that would be good for a family reunion.

SOUTH COAST HOMINY

2 medium onions, chopped
2 green peppers, chopped
1 stick oleo
6 Tbsp. flour
2 tsp. salt
1 tsp. dry mustard
Tabasco sauce to taste
2 1/2 c. milk
1 can sliced mushrooms
1 can sliced ripe olives
1 large jar sliced pimentos
1 pkg. sliced almonds
2 large cans hominy, drained
2 c. grated sharp Cheddar
cheese

Saute onions and peppers in butter. When onions are
clear, add flour, salt, mustard and Tabasco. Add milk and cook
to consistency of medium white sauce. Add hominy, almonds,
mushrooms, pimentos and olives. Pour into covered dish; top
with cheese and bake at 375 degrees until it bubbles. Freezes beauti-
fully. Good for family reunions!

COKE SALAD

1 family size cherry Jell-O
1 large can crushed pineapple
2 (10 oz.) Cokes
2 small jars maraschino
cherries, sliced
1 c. chopped pecans
1 (8 oz.) pkg. cream cheese

Drain pineapple and cherries. Add enough water to juice
to make 2 cups of liquid. Heat to boiling; remove from heat.
Add Jell-O. Stir until dissolved. Cool. Add Coke slowly (it
will foam). Chill until slightly thickened. Add other ingre-
dients. Chill until firm. This makes a large salad for family
dinners or reunions.

TEXAS SHEET CAKE

1/2 lb. butter
1 c. water
4 Tbsp. cocoa
2 eggs
1/2 c. sour milk (add 1/2 tsp.
vinegar to sour the milk)
1 tsp. vanilla
1 tsp. baking soda
2 c. flour
2 c. sugar
1/2 tsp. salt

Icing:
1/4 lb. butter
4 Tbsp. cocoa
6 Tbsp. milk
1 lb. confectioners sugar (3
1/2 c.)
1/2 c. chopped nuts (optional)
1 tsp. vanilla

Preheat oven to 375 degrees. Grease an 11 x 18-inch pan.
Bring butter, water and cocoa to a boil in a small saucepan.
In a small bowl, beat the eggs with sour milk, vanilla and
baking soda. In a large bowl, sift together flour, sugar and
salt. Add butter mixture and egg mixture to flour, mixing
gently. Pour into prepared pan. Bake 20 minutes or until cake
tests done at 375 degrees. Spread icing on the hot cake when it comes
out of the oven.
To make icing: Bring the butter, cocoa and milk to a
boil in a saucepan. In a separate bowl, combine confectioners
sugar, nuts and vanilla. Add butter mixture and blend thor-
oughly.
Taken from the Sunday Pittsburgh Press. A reader took
this cake to a family reunion and had to mail the recipe to
everyone attending. They loved it and my family loves it.

STRAWBERRY SALAD

1 family-size cottage cheese
1 family-size Cool Whip
1 family-size strawberry
Jell-O
1 small can crushed pineapple,
drained
1 small can pecans

Mix together cottage cheese and Cool Whip. Add dry
strawberry Jell-O; mix well. Add drained, crushed pineapple;
add nuts. Refrigerate.

BEST EVER BAKED BEANS

1-gal. size (10) cans pork and
beans
1/2 lb. beef sausage or Polish
kielbasa, sliced or 1 pkg.
little sizzlers
1 large green pepper, chopped
1 onion, chopped
1/4 c. molasses
3 Tbsp. catsup
2 Tbsp. mustard
2 Tbsp. barbecue sauce
1/4 tsp. Tabasco sauce
1 tsp. pepper
1/4 tsp. nutmeg
2 drops vanilla

Cooking these in a crock-pot makes them the perfect
summer recipe, and they're wonderful for backyard barbecues and
family reunions.
Combine beans, sausage, peppers and onions; put in
crock-pot. Mix together remaining ingredients and then gently
stir into beans. Cook on high until beans bubble and then on
low for 3 to 4 hours. Remove lid for last hour of cooking to
thicken juice. Serves 12 to 15.

LUCY MOORE'S THREE BEAN SALAD

1 can green beans
1 can kidney beans
1 can wax beans
1 medium green pepper
3 small onions
1 can pimentos, drained

Sauce:
3/4 c. sugar
3/4 c. vinegar
1/4 c. oil
1 tsp. salt
1/4 tsp. black pepper

Mix beans, chopped pepper, chopped onion and pimentos.
Pour sauce over this and chill.
Sauce: Combine ingredients and boil. Then pour over
beans.
It keeps a long time in the refrigerator. Good for
picnics, dinners and family reunions. I make this each year to
take to Homecoming at Cauthron, Arkansas where may parents
Virgil and Lou Ray Bethel are buried.

FRUIT SALAD BALLAD FOR 75

12 eggs, beaten
3 c. sugar
3 c . vinegar
1 1/4 c. butter
4 (16 oz.) pkg.
mini-marshmallows
1 qt. whipped cream
12 lb. green seedless grapes
20 (15 oz.) cans pineapple
tidbits, drained

Combine eggs, sugar and vinegar in saucepan. Cook,
stirring constantly, until thick. Add butter and stir until
melted. Cool. Fold in whipped cream. Blend in grapes,
pineapple and marshmallows. Chill for 2 hours. (Great for
family reunions or ladies' luncheons.

SUMMER COLE SLAW

1 head cabbage
1 head red cabbage
1 medium onion
1 large carrot
1 large bell pepper
1 stalk celery
1 large cucumber
1 (16 oz.) kraft bottle cole slaw
dressing
salt and pepper to taste
1 crookneck squash (optional,
this adds a lot of color)

Chip and dice all ingredients. Put into salad bowl and
mix with cole slaw dressing. Salt and pepper to taste. Great
for family reunions and barbecues.

FAMILY REUNION BEAN DISH

1 lb. ground beef
1 bell pepper, chopped
2 onions, chopped
1/2 c. brown sugar
1 small can crushed pineapple
1 can pork and beans
1 can lima beans
1 can kidney beans
1 can baked beans

Brown beef, pepper and onions until tender. Drain. Add
other ingredients. Mix well and bake for 45 minutes at 400 degrees.

PIG PICKING CAKE

Batter:

1 can mandarin oranges
1 box yellow cake mix
3/4 c. Wesson oil
4 eggs

Mix together.

Filling:
1 can crushed pineapple
(15 1/4 oz.)
1 box vanilla Jell-O pudding
(family size)
1 c. Dream Whip (family size)
Mix together.

CREAMY BROCCOLI BAKE

2 pkg. (10 oz. each) frozen
broccoli spears, cooked and
drained
1 can condensed cream of
mushroom soup
1/4 c. milk
1/2 c. shredded Cheddar cheese
1 c. Bisquick baking mix
1/4 c. firm mayonnaise or
butter

Preheat oven to 400 degrees. Place cooked broccoli in 1 1/2
quart casserole. Beat soup and milk until smooth; pour over
broccoli. Sprinkle with cheese. Mix baking mix and margarine
until crumbly; sprinkle over cheese. Bake about 20 minutes
until top is light brown. Yield: 6 or 8 servings.
Comments: Easy to make; can be prepared ahead of time
and baked just before serving. This is a favorite of even
non-broccoli lovers and is always a family favorite and usually
requested for our family get togethers.

My mom always made pimiento cheese for the family reunion. Served it with crackers.

1 (8-ounce) package shredded sharp Cheddar
1 (4-ounce) jar pimientos, with juice (sliced not chopped)
1/2 cup mayonnaise
Salt and pepper to taste

Grate the cheese, and then mix it all in a food processor until all ingredients mixed well.

to spice it up, sometimes she would add jalepenos.
