Garlicky Black Pepper Shrimp & Black Eyed Peas

Garlicky black pepper shrimp and black-eyed peas is Low Country Southern cooking in one skillet: bacon, holy trinity, bay-scented peas, and wine-splashed shrimp finished with cracked pepper.

Baked Ling Cod with Lemon-Garlic Butter Sauce

Have you ever seen a ling cod? They are almost primeval looking - huge, gaping mouths with very sharp teeth. As with any fish, the most important factor for how good it tastes is its freshness. I picked up this fillet at my local fish market where they told me that the ling cod had just come in that morning. With the lemon-garlic butter sauce it was divine.

Chicken Congee

Loaded with healthy protein from chicken and egg and anti-inflammatory herbs such as coriander and ginger, this is a great way to start the day. Although traditionally made by cooking grain in the soup until it becomes mushy, consider cooking grains separately to retain their texture and nutrients. Also swap white rice for brown rice or quinoa, or even barley to boost the nutrition profile of the soup.

GF Banana Pudding

So it had been over 2 years since being diagnosed with Celiac Disease and I still hadn't had any homemade banana pudding. Thanks to vitacost.com and their awesome gf selection I found some yummy vanilla wafers that were gluten free (Kinnickki brand). Of course my longing needed to be rich, creamy and worth the long wait lol. So here is the deliciousness! I think the cream cheese makes it better than any I've ever tried before.

Southwestern Chipotle Ranch Sweet & Spicy Chicken Salad

Southwestern chicken salad: crisp lettuce, southwest veggies, and chicken tossed in a creamy chipotle-ranch and sweet-spicy BBQ dressing. A fast, no-fuss salad with a kick.

Vanilla-Bean Porridge with Apple & Cinnamon

Oats are a great source of soluble fibre and have been shown to help lower cholesterol levels. Cinnamon is well regarded for its ability to balance sugar levels, thus keeping hunger at bay for longer. Adding flaxseeds or chia seeds boosts the omega-3 oils and adds even more fibre to the dish. The dish can be assembled the night before and left in the fridge for the oats to soften. All that is required the next morning is to add hot milk.

Pumpkin Bread IV

This is an all time, excellent, every time recipe. It is very simple, and so well loved by many. I make these for family, friends, school functions, work functions, for gifts etc. It has always been raved about - even by kids! I recommend bringing this to your Thanksgiving function; you will be thanked many times for this delicious taste treat. This is a large quantity, but you will end up making this size batch more than once. You can also make muffins and small loaves using this recipe; bake for 30 to 35 minutes

15 Bean Soup

It might seem a little odd, but this soup is so flavorful and easy to make! My daughter even loves it :) 3 simple ingredients that's it. 1 bag 15 bean soup dry (rinse and soak in pot of water overnight) 1 can of Rotel (I use mild for a little kick) 1 packet of dry ranch dressing mix. Soak beans overnight, then bring beans and about 6-8 cups water to a boil. Add can of Rotel and ranch mix to pot and simmer for 2-3 hours.
