Zesty Black Bean & Corn Salsa
This dish is good on its own or served with chips. It can also be used as a filling for a shouthwestern wrap. It is very color full and full of flavor. Great dish to bring to a party!

2 Tbsp vegetable oil
2 garlic cloves, minced or garlic powder
2 1/2 c fresh corn kernels (about 4 large ears)
1/4 c fresh lime juice (about 2 limes)
1 Tbsp extra virgin olive oil
2 Tbsp red wine vinegar
3/4 tsp ground cumin
1/4 tsp salt
1 c. halved grape tomatoes (optional)
1 c diced red, orange, yellow or green bell pepper
3/4 c diced red onion
2 Tbsp chopped fresh cilantro
2 Tbsp minced, seeded jalepeno pepper
1 Tbsp chopped fresh parsley
1 19 oz can black beans rinsed
Chili powder (optional)
