This is the kind of recipe that sounds almost too simple until you try it. Cold watermelon cubes dipped in a bright, spicy lime sauce hit every note at once: sweet, sour, salty, and hot.

The dipping sauce is just three things mixed together: a full cup of fresh lime juice, salt, and hot pepper sauce. That ratio of lime to watermelon is bold on purpose. The acidity sharpens the watermelon’s sweetness, the salt amplifies it, and the pepper sauce adds a slow burn that keeps you reaching for the next cube.

This combination shows up across Mexico and Southeast Asia in different forms. Street vendors in Mexico sprinkle chili-lime salt on fresh fruit for exactly the same reason: the contrast makes sweet fruit taste even sweeter.

Cube the watermelon, arrange it on a platter, and set the dipping sauce in a bowl in the center. That’s the whole recipe. It’s a crowd-pleaser at summer cookouts and takes less time to make than it does to slice the melon.

Pro Tips

  • Use fresh-squeezed lime juice, not bottled. Bottled lime juice has a flat, slightly bitter taste that doesn’t work here.
  • Chill the watermelon cubes in the fridge before serving. Warm watermelon is mushy and less refreshing.
  • Start with ¼ teaspoon hot sauce and taste. You want heat that lingers, not heat that overwhelms the fruit.
  • Seed the watermelon carefully. Nothing kills the snacking vibe like biting down on a seed.

Variations

  • Tajin style: Replace the salt and hot sauce with a sprinkle of Tajin seasoning in the lime juice for a Mexican street fruit flavor.
  • Tropical twist: Add a splash of coconut water to the dipping sauce for a milder, sweeter version.
