Sara C's Simple Chicken Parmesan

4 boneless, skinless chicken breasts
1 tablespoon of olive or vegetable oil
Cooking spray
1 box of Panko Italian bread crumbs (will use approx. half)
2 eggs
1 cup of all purpose flour
1 cup of mozzarella cheese
1 jar of spaghetti sauce
6 cups of water
Spaghetti noodles
Parmesan cheese (optional)
Directions
Step 1: Preheat oven to 400℉ (200℃).
Step 2: Heat oil in skillet on medium heat.
Step 3: Place flour, egg wash, and bread crumbs on three separate plates. Coat chicken with flour; then dip in egg and top with bread crumbs.
Step 4: Place in hot skillet and cook 3 to 4 minutes on each side or until bread crumbs are golden brown.
Step 5:
Spray pan and place chicken in oven, covered, for 20 minutes or until cooked through.
Step 6: Meanwhile, bring water to a boil in a pot and cook spaghetti noodles until tender; drain (do not rinse).
Step 7: Heat spaghetti sauce on medium-low heat.
Step 8: Remove chicken from oven, cover with cheese, and return uncovered for 5 minutes or until cheese is melted.
Step 9: Place noodles on plate, top with chicken, and cover with sauce (finish with parmesan cheese if desired).
