Rocky road treats reimagine the classic chocolate ice cream flavor as a no-bake fridge bar. Melted chocolate chips and butter coat cocoa krispies cereal, then chopped pecans and mini marshmallows fold in for that signature rocky-road crunch and chew. Press into a pan, chill an hour, slice into squares, done.

Using chocolate cereal instead of plain rice krispies is the move that makes these distinctly rocky road. The cocoa-coated puffs add another layer of chocolate flavor without making the bars overly rich, and they keep a crisp snap even after the marshmallows go in.

Folding the marshmallows in last and gently is critical. The melted chocolate is hot enough to soften them on contact, so quick gentle folding keeps the marshmallows intact. Stirring too long melts them into the chocolate and you lose that cloud-like texture in the finished bars.

Foil-lining the pan is the smart shortcut. Lift the entire slab out by the foil flaps once chilled, then cut on a board for clean square edges. Cutting in the pan dulls the knife and crumbs the bars at the edges.

Directions

Melt chocolate chips with butter or margarine in top of double boiler or in microwave.

Stir in cocoa krispies and chopped pecans. Fold in marshmallows.

Press into foil-lined 9×13 inch pan.

Chill 1hour.

Remove from pan and cut into 24 to 30 squares.
