5 minMeetha lassi is the classic sweet Indian yogurt drink you’ll find at every restaurant and roadside stall across the subcontinent. Three cups of plain yogurt, sugar, ice-cold water, and cracked ice go into a blender and come out as a thick, frothy, cooling drink that pairs beautifully with spicy food.
The simplicity here is the whole point. No fruit, no spices, just the pure, tangy flavor of yogurt balanced with enough sugar to smooth out the sourness. Blend for a full two minutes; the extended blending incorporates air and breaks down the ice completely, giving you that signature frothy top layer that separates a proper lassi from yogurt just stirred with water.
Use full-fat yogurt for the richest, creamiest result. Low-fat works but produces a thinner drink. Partially crack the ice cubes before adding them to the blender so they break down evenly and don’t leave chunky ice shards in the finished drink. Serve in chilled glasses for maximum refreshment.
