Economy waffles earned their name back when home cooks counted every cup of flour. Just six ingredients (eggs, milk, salt, flour, baking powder, and a single tablespoon of melted butter) is all it takes, and yet the texture rivals waffles built from much fancier batters.

The separated-eggs technique is the recipe’s whole personality. Beating the egg whites to stiff peaks and folding them in last traps air that expands in the hot waffle iron, giving you a tall, light, crispy waffle without the buttermilk or extra fat that other recipes lean on.

Serve with maple syrup, fresh berries, whipped cream, or a swipe of butter and powdered sugar. The blank canvas of a plain waffle takes whatever you put on top.

Pro Tips

  • Beat the egg whites to stiff peaks (they should hold their shape when you lift the beater) but still look glossy. Overbeaten whites turn dry and clumpy and won’t fold smoothly.
  • Fold the whites in two additions with a rubber spatula. The first deflates the batter to lighten it; the second keeps the air locked in.
  • Don’t skip the melted butter. Even just one tablespoon adds critical flavor and helps the waffles release from the iron.
  • Preheat the waffle iron fully before adding batter. Cold irons make pale, soggy waffles; hot irons give you crisp golden ones.
  • Pour batter to fill the iron without overflowing. Overfilled irons leak batter that burns onto the heating element.

Variations

  • Add 1 teaspoon of vanilla and 2 tablespoons of sugar to the batter for a sweeter dessert-leaning waffle.
  • Replace half the milk with buttermilk for tangier, more flavorful waffles with extra lift.
  • Stir 1 teaspoon of cinnamon and ¼ teaspoon of nutmeg into the dry ingredients for a warmly spiced version that pairs with apples or berries.

Directions
