These peanuts get tossed in lime juice, chili powder, and cayenne, then baked low and slow until they’re dry, crunchy, and coated in a salty-spicy-citrusy shell that hits every craving at once.

Make a big batch because they disappear fast at parties, game days, or just standing in front of the open pantry at midnight.

Kitchen Tips

  • Stir every 15 minutes while baking. This ensures even coating and prevents sticking.
  • Let them cool completely on the baking sheet before storing. They crisp up as they cool.
  • Using salted peanuts? Skip the kosher salt entirely or they’ll be way too salty.
  • Double the cayenne if you like real heat. The lime juice tames the burn just enough.

Directions

Position racks in the upper and lower thirds of oven, preheat to 250°F.

Add lime juice, chili powder, salt and cayenne in a large bowl and whisk until well blended.

Stir in peanuts, toss to coat evenly.

Divide between 2 large baking sheets, evenly spread in an even layer.

Bake, stirring every 15 minutes, until dry, about 45 to 50 minutes.

Allow to cool completely.

Store in an airtight container.
