These peanuts get tossed in lime juice, chili powder, and cayenne, then baked low and slow until they’re dry, crunchy, and coated in a salty-spicy-citrusy shell that hits every craving at once.
Make a big batch because they disappear fast at parties, game days, or just standing in front of the open pantry at midnight.
Kitchen Tips
- Stir every 15 minutes while baking. This ensures even coating and prevents sticking.
- Let them cool completely on the baking sheet before storing. They crisp up as they cool.
- Using salted peanuts? Skip the kosher salt entirely or they’ll be way too salty.
- Double the cayenne if you like real heat. The lime juice tames the burn just enough.
