Ingredients

6 ½ tablespoons lime juice
6 ½ tablespoons chili powder
4 ½ teaspoons kosher salt
½ teaspoon cayenne pepper
or to taste

6 ½ cups peanuts
unsalted and cocktail, if using salted peanuts, omit the salt

Directions

Position racks in the upper and lower thirds of oven, preheat to 250°F.

Add lime juice, chili powder, salt and cayenne in a large bowl and whisk until well blended.

Stir in peanuts, toss to coat evenly.

Divide between 2 large baking sheets, evenly spread in an even layer.

Bake, stirring every 15 minutes, until dry, about 45 to 50 minutes.

Allow to cool completely.

Store in an airtight container.
