Ingredients

2 cups chicken thighs poached
1 cup celery diced.
1/3 cup mayonnaise

Directions

In a medium-size mixing bowl, combine the chicken, celery, and pepper sauce.

Mix lightly; add the mayonnaise and mix again.

Add more mayonnaise if needed to moisten well.

Chill 1 to 2 hours before serving.

Line a bowl or platter with greens and spoon the salad onto the greens.

Yellow peppers Stuffed with Quinoa, Corn and Feta Cheese

This is a great dish to serve guests when you really want to impress them. Looks wonderful to the eye, especially using yellow and red peppers for some contrasting colours. And the taste is perfect for summer or any season. Very light and fresh with little bursts of flavors and textures.
