Ingredients

1 each cabbage head white, cored, thinly sliced
6 each garlic cloves chopped
1/2 each english cucumber cut into bite-size pieces
1 each carrot coarsely grated
1/2 cup white vinegar distilled
3 tablespoons sugar
3 tablespoons soy sauce
2 each green chili peppers seeded, chopped
1/4 cup vegetable oil
2/3 cup peanuts dry, roasted, coarsely chopped
3 tablespoons cilantro coarsely chopped

Directions

Toss cabbage with garlic, cucumber, carrot, vinegar, sugar or honey, soy sauce or fish sauce, chiles and vegetable oil.

Chill until ready to serve, then top with peanuts and cilantro.

Grated Potato Pancakes

This recipe is easy, quick to make (once the potatoes are grated!)...and absolutely delicious!! I would make these anytime...A minimum of ingredients needed makes it an easy one to rely on for a quick meal, since everything included here is already in the house anyway; no special or unusual ingredients needed...tastes just like the restaurant-style.
