| 2 | each | oranges | peeled & thinly sliced |
| 2/3 | cup | figs, dried | stems removed, quartered |
| 1 | each | apple | or pear, cored, thinly sliced |
| Cardamom cream dressing | |||
| 1/2 | cup | yogurt, non-fat | vanilla |
| 1/2 | teaspoon | honey | |
| 1/4 | teaspoon | cardamom seeds | or cinnamon, ground |
| 1 | tablespoon | coconut | toasted, garnish |
On four individual salad plates, arrange a bed of lettuce leaves.
Place orange slices, fig quarters, and apple slices decoratively over lettuce.
For dressing, in a small bowl, stir together yogurt, honey and ground cardamom until blended.
Drizzle mixture over salads.
Sprinkle coconut over salads for garnish.

Best banana bread I have ever had. I even forgot to put the butter in the last time I made it and it was still delicious. Very moist, and has lots of banana flavor. Put pecans in for a real treat!
