Ingredients

1 x lettuce leaves
2 each oranges peeled & thinly sliced
2/3 cup figs, dried stems removed, quartered
1 each apple or pear, cored, thinly sliced
Cardamom cream dressing
1/2 cup yogurt, non-fat vanilla
1/2 teaspoon honey
1/4 teaspoon cardamom seeds or cinnamon, ground
1 tablespoon coconut toasted, garnish

Directions

On four individual salad plates, arrange a bed of lettuce leaves.

Place orange slices, fig quarters, and apple slices decoratively over lettuce.

For dressing, in a small bowl, stir together yogurt, honey and ground cardamom until blended.

Drizzle mixture over salads.

Sprinkle coconut over salads for garnish.

Moist Banana Bread

Best banana bread I have ever had. I even forgot to put the butter in the last time I made it and it was still delicious. Very moist, and has lots of banana flavor. Put pecans in for a real treat!
