| 3 | ounces | coriander seeds | |
| 1 | ounces | cumin seeds | |
| 1/4 | ounces | fenugreek seeds | |
| 1 | ounces | cloves | |
| 2 | ounces | cardamom pods | pods removed, seeds only |
| 1/4 | teaspoon | mace | |
| 1/4 | teaspoon | nutmeg | |
| 1 | ounces | cinnamon | |
| 1 | ounces | black pepper |
Roast coriander seeds, cumin, and fenugreek seeds separately for a few minutes until their rich aroma is given off. Combine with all other ingredients and grind.
Pass the mixture through a sieve and store in an airtight jar.
NOTE: Roasting the ingredients separately is important since each gives off its characteristic aroma at a different time.

General:The nutmeg tree, Myristica fragrans, is special in that it produces two seperate spices, nutmeg and Mace. Mace is the ground outer covering (aril) of the nutmeg seed. A piece of unground Mace is called a blade....
