Blended into the honey-and-oil base, the tofu adds moisture and protein while keeping the bars tender without loading up on butter or eggs. You can’t taste it at all. It just disappears into the batter and does its job quietly.
Honey replaces refined sugar entirely, and orange juice adds a citrus brightness that plays off the tart cranberries and sweet apples. The combination of fresh fruit, cinnamon, and honey gives these bars a warm, autumnal flavor that tastes far more indulgent than the ingredient list suggests.
Two and a half cups of fresh or frozen cranberries is a generous amount. Ingredients
Directions
Preheat oven to 350℉ (180℃).
Spray a 10 x 15 x 1 inch pan with non-stick spray.
Whip honey, orange juice and salt together; then blend with oil.
Add tofu, vanilla, egg, and beat well.
Sift together flour, baking soda and cinnamon.
Add to the honey/oil mixture and stir well. Fold in apples, cranberries and nuts.
Pour batter into prepared pan.
Bake for 30 to 35 minutes or until a toothpick inserted near the center comes out clean.
Yields 24 to 36 bars. Sprinkle with powdered sugar.
Tip: May substitute 2½ cups fresh blueberries for cranberries.
