Delicious!! I have made it three times already! The first time I substituted minced onion with minced garlic - big mistake! WAY too much garlic. I have been making enough for two and freezing one. My family loves it!

Ingredients

4 ounces spinach fresh, rinsed well
1 cup swiss cheese shredded
1/2 cup monterey jack cheese shredded
1/2 cup cottage cheese
1 1/4 teaspoons onion dried, minced
1 tablespoon olive oil
1/2 teaspoon basil
1/2 teaspoon savory
1/2 teaspoon black pepper
1/4 teaspoon garlic salt
4 large eggs
1/2 cup milk, skim, evaporated
1 each pie shell (9 inch)

Directions

Blend cheeses, onion, oil and seasonings until smooth.

Add eggs, milk, and spinach.

Pour into prebaked (according to directions on box) pie crust shell.

Bake at 375 degrees for 35 to 40 minutes.

Cool for 10 to 15 minutes.

Serves 6 slices .

Yellow peppers Stuffed with Quinoa, Corn and Feta Cheese

This is a great dish to serve guests when you really want to impress them. Looks wonderful to the eye, especially using yellow and red peppers for some contrasting colours. And the taste is perfect for summer or any season. Very light and fresh with little bursts of flavors and textures.
